SUYA is no doubt the most popular snack in the Nigerian food industry. Seriously, 178 million out of our 178.5 million population have tasted it. That’s how much Nigerians love their Suya. It is the most popular street food in the country.
Suya is basically spicy barbecued /skewered beef but its
popularity lies in the distinct taste which is derived from the indigenous blend
of dry and ground species(peanut powder, paprika ,ginger ,salt etc)however
most Nigerians call any spicy barbecued meat Suya, e.g Chicken Suya etc. The Suya spice mix is so good that some people cook other meals with it just to infuse the "Suya flavor"
Nothing screams home to Nigerians in Diaspora as a wrap of
Suya and there is no fun community in this country without a Suya vendor.
Suya originated in the Northern parts of Nigeria and has
quickly permeated the society, taking over our taste buds. Rumor has it that
the best Suya makers are found in Kastina State.
Most Suya spots sell only at night while some do through
the day into the night.

Just as the Chinese spring rolls and the Mexican Tacos, Suya
has gained popularity internationally.
All around Nigeria, Suya making is known to be the Hausa or
Fulani man’s specialty, which makes sense because they rear the cattle and rams and are experts in meat processing. People like me would rather buy a “not so
good Suya” from them than buy a "good" one from someone of another tribe. It’s
just in my head .To me, it’s like eating fisherman’s soup prepared by a Fulani
woman
Most healthcare professionals have questioned the safety of consuming street Suya. Exposure of the meat, handling and packing in old newspapers does not sound hygienic at all but no be wetin me and my naija people wan hear. The fire used in cooking is enough disinfectant for us.

Some brave Nigerian Chefs are already making homemade versions
and it’s worth the try. Imagine serving your guests homemade Suya, they would
be impressed.
