NIGERIAN FOOD RECIPES : OKPA




Okpa is a traditional Nigerian meal, originating somewhere in the east although the plant is cultivated in large quantity in the north. Many communities have laid claims to its originality but I’m aware that Enugu State is the “Okpa” capital of Nigeria. Only the chant of “Okpa di oku” would wake you from your sleep at the 9th mile and four corner junctions if you’re coming into the city by road. The Yoruba woman in Oshodi would even calls hers “Okpa Enugu” to get customers. At 6am, every popular junction in Enugu city comes alive with sellers and buyers of this power breakfast.

Okpa is a delicious, nutritious, filling and easy to make meal. It is made from the Okpa seeds (Bambara nuts) a tropical legume. According to a publication on the research journal of Applied Sciences “The Analysis Of Bambara Nut”, this nut has high nutritional value with about 19% protein,47% carbohydrate and many other vitamins and minerals, Okpa is indeed a super food.

Cooking Okpa is easy, fast and requires simple Ingredients such as palm oil , pepper and salt. Infact the natural flavor and taste of the meal is ruined when too much ingredients are added. Okpa is made from dry and ground Bambara nuts. Okpa can be eaten at any time of the day but best as breakfast. It can be enjoyed alone or with a side dish like pap. The nuts can also be eaten while they are still fresh, just boiled and eaten like groundnut.

Pre-mixed and well packaged Bambara nut (Okpa) powder can be found in some super markets, all you need do is mix in the wet ingredients and cook. You can also buy the seeds, process and store the powder in an air tight and dry container. Pls note that Okpa seeds come in small nuts/pods which have to be cracked open to release the seeds. When dry, the seeds are very hard and would need a strong grinder to turn them into powder.
