Okpa is a traditional Nigerian meal, originating somewhere in the east although the plant is cultivated in large quantity in the north. Many communities have laid claims to its originality but I’m aware that Enugu State is the “Okpa” capital of Nigeria. Only the chant of “Okpa di oku” would wake you from your sleep at the 9th mile and four corner junctions if you’re coming into the city by road. The Yoruba woman in Oshodi would even calls hers “Okpa Enugu” to get customers. At 6am, every popular junction in Enugu city comes alive with sellers and buyers of this power breakfast.
